Build flavor slowly
A good broth is one of the most useful things to keep in the kitchen. It can become soup, enrich grains and sauces, or simply be warmed and sipped.
This version uses everyday vegetables, herbs, turmeric, and a long gentle simmer to draw out a full, rounded flavor.
What you'll need

- 2 carrots, roughly chopped
- 3 celery stalks, roughly chopped
- 1 onion, quartered with skin on
- 8 garlic cloves
- 3 pounds beef, chicken, or mixed bones
- 2–3 bay leaves
- 1 tablespoon kosher salt
- 2 teaspoons turmeric
- 3–4 pimento berries, optional
- ¼ teaspoon black pepper
- 2 teaspoons dried thyme
- 1–2 tablespoons apple cider vinegar
- About 14 cups water
Step by step
Instructions
- Place the carrots, celery, onion, garlic, bones, bay leaves, salt, turmeric, pimento, pepper, and thyme in a large slow cooker or stockpot.
- Add the apple cider vinegar, then pour in enough water to cover the ingredients.
- Cook on low for 8–10 hours. If using the stovetop, keep the broth at the gentlest simmer and add water as needed.
- Skim away foam or excess fat from the surface as the broth cooks.
- Strain carefully through a fine-mesh sieve. Cool promptly and transfer to covered containers.
- Refrigerate for up to 4 days or freeze in useful portions for 3–4 months.

Roast the bones for deeper flavor.
For a richer, darker broth, roast the bones at 425°F until browned before adding them to the pot.
