Inspired by the creative café drinks I enjoyed while traveling in Seoul, this cold foam layers maple, pumpkin, spice, and tangy cream cheese over your favorite coffee or chai.

A small spoonful transforms an everyday drink into a seasonal treat.

What you'll need

Ingredients

  • ½ cup heavy cream
  • 1½ tablespoons pumpkin purée
  • 1 teaspoon pumpkin spice mix
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup
  • 2 ounces cream cheese, softened
  • Half-and-half, optional for serving

Step by step

Instructions

  1. Add the heavy cream, pumpkin, spice mix, vanilla, maple syrup, and cream cheese to a bowl or blender.
  2. Whip or blend until smooth and lightly thickened. Do not overwhip.
  3. Transfer to a clean jar and refrigerate for up to 3–4 days.
  4. For each drink, froth about 1 tablespoon of the mixture. Add up to 2 tablespoons half-and-half if you prefer a lighter, looser foam.
  5. Spoon over hot or iced coffee, cold brew, or chai and serve right away.
