Musubi is compact, comforting, and easy to customize. This version adds egg and crisp vegetables for extra color and texture.

Pack it for lunch, serve it as a snack, or arrange a platter and let everyone choose their favorite fillings.

What you'll need

Ingredients

  • 1 can Spam, low-sodium or gochujang variety
  • 2 cups cooked short-grain rice
  • 2 large eggs
  • ½ cup finely cut carrots
  • ½ cup cucumber or pickled radish
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon mirin or oyster sauce, optional
  • 2 nori sheets, cut into strips
  • Neutral oil
  • Furikake, optional

Step by step

Instructions

  1. Cook the rice and keep it covered and warm.
  2. Slice the Spam into 8 pieces. Whisk the soy sauce, sugar, and mirin or oyster sauce, if using.
  3. Pan-fry the Spam until browned. Add the sauce and turn the slices until glossy and glazed.
  4. Beat the eggs and cook them as a thin omelet. Cut into musubi-sized pieces.
  5. Lightly sauté the carrots; keep the cucumber or pickled radish fresh and crisp.
  6. Press rice into a musubi mold or shape it firmly by hand. Layer with Spam, egg, and vegetables.
  7. Wrap each piece with a strip of nori, seam-side down. Sprinkle with furikake if desired.

Warm rice shapes best.

Keep a small bowl of water nearby and dampen your hands so the rice does not stick.

Try baked tofu, avocado, sesame oil, or a little sriracha mayo for a different variation.
